Craving Garden Fresh Foods

It's that time of the year when anything that tastes light and fresh is making its way into my tummy! :) There is just something about the warmer weather that makes heavy meals seem so unappealing to me. Anyone else feel that way?

While it is still a little too early to have any tomatoes from my own garden to use in this recipe (although I did notice some tiny little tomatoes making their way out into the world this week on my plants), I was able to use some of my own fresh basil in this recipe.

It was fast, simple, light, fresh and above all de-lish! :)

You must try it for yourself sometime very soon....


GARDEN FRESH BRUSCHETTA

A few simple ingredients is all you will need...


First, pre-heat your oven to 350 degrees...


Chop tomatoes, fresh basil, red onion and garlic and combine in a bowl....


Next, add your olive oil and balsamic vinegar and toss with tongs until everything is thoroughly mixed. Then place the entire bowl in the refrigerator for 20 minutes to chill...


Meanwhile, slice your French bread baguette into 1/4" to 1/2" slices and place on a baking sheet. Place in the oven until the bread becomes nice and crispy...



After your bread is done, pull your mixture out of the refrigerator and place a heaping spoonful of the bruschetta mixture onto each slice of bread immediately before serving and enjoy....
