I made this Chicken Tortilla Soup the other night, and it is by far the BEST chicken tortilla soup I have ever had the pleasure of tasting!
You see, I eat Mexican food like it is going out of style, but normally I tend to stay away from Chicken Tortilla Soup altogether when ordering at Mexican restaurants because it is usually never to my liking. I find that the soups I have encountered are either A.) Too cheesy (otherwise known as too fatty, and I would rather save my calories for the enchiladas!) or B.) Too bland, watery, etc. or C.) Or they contain too many ingredients that I don't care for, like oodles of rice and not much else!
But, this recipe, it meets my top two criteria for an All-Time-Best-Recipe-Ever classification...super easy and super tasty! Plus, it makes a ton that can be put in the freezer for another night when you don't feel like cooking. :)
My husband was so cute when I asked him what he thought about it and he said, "This is seriously the best thing you have ever made!"...When I reminded him that he always says that, he said, "Yeah, but this time I really mean it...this is wonderful! I hope you and yours will think so too. :)
And naturally, because of the rave reviews it earned at my house, I feel the need to share this recipe with you. :) It cooks in the Crock-Pot, so clean-up is a breeze too. And, keep in mind you can add or omit any ingredients you want to make it truly yours! Enjoy....
